• Ingredients: Mackerel, green tea leaves, green onion head, red onion, vinegar

• Cooking steps:
Step 1: Wash mackerel, soak in water mixed with salt and vinegar for about 5-10 minutes to remove the fishy smell. Remove fish, rinse with water, drain. Fresh tea leaves soaked in salt water for 5 minutes, then rinsed and drained.
Step 2: Put tea leaves in a pot of water, bring to a boil. When the water boils, lower the heat and steep the tea for 10 minutes to release the tea juice, remove the tea leaves and set aside. Fry the mackerel with cooking oil until golden, then take out and drain the oil.
Step 3: Put the crushed scallions, sliced purple onions, pepper, sugar, Vedan fish sauce, cooking oil, and Vedan monosodium glutamate in the pot, mix well and cook on medium heat until the sauce boils and thickens.
Step 4: Put fried mackerel, 1/2 tea juice into a pot and cook on medium heat until boiling. Lower the heat and cook until the sauce thickens. Add the remaining 1/2 tea juice and tea leaves to the pot, continue to store on low heat for the mackerel to absorb the spices evenly.
