BITTER SNAIL ROLLING WITH COCONUT

Ingredients: Bitter snail, dry coconut, cassava leaves, chili

Spices: Vedan pork seasoning, salt, sugar, fish sauce

Cooking steps:
Step 1: Soak bitter snails with rice water or soak with chili for about 30 minutes for the snails to release all the mud. Shred dry coconut into long threads.
Step 2: Boil snails with lemon leaves, a few slices of ginger to remove unpleasant smell of snails. When the snail is ground down, pour it into the basket to drain.
Step 3: Wait for the snail to cool, use a toothpick/fork to remove the snail meat to a plate. Mix snail meat with Vedan pork seasoning, salt and sugar to create rich taste.
Step 4: Put the rice paper on a plate, put on leaves, shredded coconut and snails, add raw vegetables as you like and then roll. Dip it with chili garlic sauce.
