The taste of the countryside is not just a memory—it lives on in familiar dishes. In the recent May workshop “Countryside Flavors,” culinary artisan Ms. Dang Ngoc Anh – Deputy Head of the Pastry Chefs Club, Champion of The Vietnam Bakery Cup 2024 – guided participants through the art of preparing two traditional Vietnamese dishes.
Shrimp and Pork Dumplings – a humble-looking dish that holds a burst of rich, flavorful tradition. The dumpling skin is carefully kneaded from wheat flour, rice flour, and tapioca starch, enveloping a savory filling of shrimp, minced pork shoulder, jicama, carrots, and wood ear mushrooms. Everything is seasoned to perfection with Vedan’s Mommy Shrimp & Pork Seasoning, creating a deep, mildly sweet flavor reminiscent of home. Once fried to a golden crisp, the outer shell crackles delightfully, revealing the fragrant filling inside. The dumplings are best enjoyed with Vedan chili sauce and tomato sauce – a tangy-sweet and spicy combo that explodes with flavor from the very first bite.
Sweet and Sour Chili Prawns – a vibrant dish like a summer painting, with glistening reddish-orange hues and an irresistible aroma. Fresh whiteleg shrimp are fried until crispy and then coated in a smooth, rich sauce made from Vedan chili sauce, passion fruit juice, sautéed garlic, and Vedan’s Mommy Shrimp & Pork Seasoning. The thick sauce clings to every shrimp, delivering a perfect balance of crispy exterior and tender interior, with sweet, sour, and mildly spicy notes in perfect harmony.
This hands-on session not only enhanced participants’ skills in preparing rustic Vietnamese dishes but also offered a chance to explore the versatile applications of Vedan’s seasonings – a beloved companion in every Vietnamese kitchen.
